It’s our cook-along Thursday! We are so blessed to have, Ana Lorena, our well-loved community member and volunteer, share with us her secret family recipes with Green Plantain. Ana is originally from Ecuador in South America. Green plantain is their everyday food/ingredient used in so many Ecuadorian classic recipes that are popular across the country. Tonight’s recipes are: Tortilla De Verde (Green Plantain Patties/Cakes) & Bolón De Verde (Green Plantain Dumplings).

Tortilla De Verde (Green Plantain Patties/ Cakes)
Ingredients:
• 2 green plantains
• salt
• butter
• ground beef (seasoned with salt and pepper &
mixed spices as you like)
• peanut butter
• raisins
• cheese (Havarti or Mozzarella) & feta
• olive oil
Ana’s secret recipe for the Sauce
• blended half tomato, mix with vinegar, grated
carrots and chopped onions
• add any type of hot sauce as you like
Steps:
- Peel the green plantains.
- Cut them smaller and boil in water until softened.
- (exclusive Ana’s secret recipe!) Cook ground beef with olive oil, peanut butter and raisins.
- Drain softened plantain and smash them in a container, add butter, salt (water if needed) to make the smash smoother, make sure there are no hard lumps.
- Shape plantain dough into palm size balls, make a hole in the middle of each dough ball and fill it with cooked ground beef or cheese.
- Carefully shape the dough into thick patties.
- Cook the stuffed plantain patties in a frying pan with oil until golden on both sides.
- Serve warm with the sauce.

Bolón De Verde (Green Plantain Dumplings) Stuffed with Cheese
Ingredients:
• 2 green plantains
• salt
• butter
• cheese (Havarti or Mozzarella) & feta
• oil
Steps:
- Peel the green plantains and slice them into 2 cm long each.
- Heat oil in frying pan, cook plantain slices until golden for both sides.
- Transfer cooked plantain slices in container. Use paper towel to soak up excess oil.
- Smash cooked plantain, mix with cheese, add salt to taste.
- Shape smashed plantain into balls.
- Garnish with coriander.
- Serve warm & Enjoy!
