All Nations Cook-along is back. How did you like our last video? This week we have a popular dish from the Philippines: Pinakbet!
Pinakbet is a word derived from the Ilocano word Pinakebbet. It means shrunk or shriveled. Pinakbet, aka pakbet or pinak bet, is a food indigenous to the northern regions of the Philippines. It’s a Filipino dish made of a mix of vegetables steamed in a fish or shrimp sauce.
This easy to find mix of veggies grow in most Ilocano gardens and backyards.
Pinakbet is usually cooked until, as its name meaning suggests, it is almost dry and shriveled. With the Tagalog version of Pinakbet the vegetable flavors are enhanced with shrimp paste. Sometimes other meats like lechon, chicharon, or most commonly, pork, are added to the dish making subtle variations delightful and flavorful.

Pinakbet Ingredients List:
1 tablespoon oil
1/2 pound pork belly -cut into strips
1 small onion – chopped
2 cloves garlic – minced
2-3 tablespoons fish sauce
3 medium tomatoes – chopped
1/2 small squash peeled and cut into cubes
1 cup water
2 Eggplant – cut into pieces
1 Bitter Gourd – cut into pieces
Long beans
Ginger – peeled
Ladies fingers (Okra)
